Immune Boosting Parsley Pesto  (Annette)

1C of walnuts

2C of parsley

2-3 cloves of garlic

1t Himalayan salt

2-3 T of avocado or olive oil

Place all ingredients into a blender and blend until chopped moderately fine

Easy Hummus  (Annette)

Ix Can of Chickpeas

1T of Tahini

Juice of 1 lemon

3T of Olive or avocado Oil

1t Himalayan salt

Options; 2 cloves garlic, fresh herbs (coriander, parsley etc), chili or 1t ground cumin

Put all ingredients into a food processor and blend until smooth (water can be added if too thick)

Ted’s  Guacamole  (Meg)

3 avocados 

one lime

fresh coriander - handful of leaves 

small red onion 

half small red chile - seeds removed

sea salt

freshly ground pepper 

 

- Smash the avocados with a fork, and add the coriander, onion and red chile all finally chopped .

 

- Stir around with a fork and add the freshly squeezed juice of the lime.

 

- Add a good pinch of salt and pepper and taste .    Adjust seasoning to taste , we often add very generous amounts of coriander, lime and salt .

 

Serve with corn chips and enjoy !   Full of good oils :-)
